Matthew - Colombia Supremo Green Coffee Beans

Colombia Supremo 17/18

Matthew represents the pinnacle of Colombian coffee excellence. Colombia is the second-largest producer of coffee in the world and the largest producer of washed Arabica, exporting approximately 12.5 million bags annually - about 50 percent to the United States.

What makes Colombia truly unique is its size and varieties of terrains and microclimates. At every time of year, some part of the country is producing coffee, ensuring year-round availability of fresh crops.

The Supremo designation refers to the largest size of beans from Colombia - a screen size of 17 or 18. These are slightly larger than Excelso beans and are prized by roasters for their consistency, balance, and ability to showcase the clean, bright Colombian profile that has made this origin world-famous.

Understanding Supremo Grade

Colombia Supremo and Excelso are both quality grades, but they differ in important ways:

What Makes Supremo Special

Supremo (17/18 screen size): The largest beans from Colombia, offering exceptional uniformity in roasting. Beans this size roast more evenly and develop flavors more consistently.

Excelso: Slightly smaller beans that are processed in the European Preparation (EP) style, which allows for very low defect counts.

Supremo and Excelso beans may be harvested from the same tree at the same time and later sorted by size. Home roasters often prefer Supremo for its consistent roast development and classic Colombian profile.

Colombia's Renowned Coffee Regions

Colombia has 32 departments and 22 coffee-growing regions. Our Supremo is sourced from a single region, though that region changes based on harvest timing. What remains consistent is the balanced, smooth cup profile with notes of fruit, chocolate and caramel.

Huila

Produces juicy, fruity, complex coffees with lots of body. One of Colombia's most celebrated regions.

Antioquia

Known for lighter body, abundant citrus notes, and bright, juicy profile - perfect morning coffee.

Tolima

Celebrated for bright, citric acidity and clean cup profiles with excellent clarity.

Santander

Often associated with chocolate and tobacco notes, adding sweetness and depth.

Our single-region Supremo is carefully selected to deliver a balanced cup profile: smooth with notes of fruit, chocolate and caramel, medium body, bright acidity, and a pleasant, clean aftertaste.

Flavor Profile Development

Matthew's balanced Colombian profile works beautifully across roast levels, though it truly shines at light to medium roasts:

Light Roast (City)

Flavor Notes: Bright citrus, green apple, floral notes, crisp acidity, tea-like clarity

Best For: Pour over, V60, Chemex - showcasing brightness and complexity

Development: Drop at or shortly after first crack to preserve fruity brightness and acidity

Medium Roast (Full City) - RECOMMENDED

Flavor Notes: Milk chocolate, caramel sweetness, balanced fruit notes, smooth body, bright but balanced acidity

Best For: Drip coffee, French press, cold brew - the classic Colombian sweet spot

Development: Drop between first and second crack for perfect balance of sweetness and brightness

Medium-Dark Roast (Full City+)

Flavor Notes: Dark chocolate, caramelized sugar, reduced acidity, fuller body

Best For: Espresso, moka pot, those who prefer less acidity

Development: Into early second crack - don't go too far or you'll lose Colombian character

Roasting Guide for Colombia Supremo

Key Roasting Tips

  • Bright acidity profile: Colombian coffees are prized for their brightness. Develop sweetness while preserving acidity for the classic profile
  • Even bean size: Supremo 17/18 beans roast very uniformly - take advantage by aiming for consistent development
  • Charge temperature: Start at 380-400°F for most home roasters
  • First crack timing: Typically occurs around 8-9 minutes depending on batch size
  • Sweet spot: Full City roast (between first and second crack) showcases the chocolate-caramel-fruit balance
  • Don't overdevelop: Going too dark masks the clean, bright character that makes Colombian coffee special
  • Cooling: Cool quickly to preserve brightness and prevent over-roasting
  • Resting: Let beans rest 12-24 hours minimum. Colombian coffees are delicious fresh but improve for 2-4 days

Pro Tip: Showcase the Brightness

Colombian Supremo is all about balance and brightness. Unlike Indonesian coffees where you want to develop body and earthiness, here you want to preserve the lively acidity while developing sweetness. Think "bright but not sharp" - that's the Colombian sweet spot. A Full City roast perfectly balances sweet caramel notes with that signature Colombian brightness.

Common Issues & Solutions

Too acidic/sour: You've underdeveloped. Push slightly further past first crack to develop sweetness and balance the acidity.

Flat or boring: You may have baked the roast by stalling. Maintain steady heat application through the roast to preserve vibrancy.

Lost the Colombian character: You went too dark. Colombian coffees lose their signature brightness and sweetness when over-roasted. Stay light to medium.
